This is my first real post!! So exciting! I've been wanting to create a blog for a while now as a place to keep all my pictures, recipes and tips!
I also, love the idea of being able to continue the conversation from my Instagram page, over to the blog for some bonus chatting!
I do check out TONS of blogs for recipes and inspiration, and the number one thing I cannot stand is when people write paragraphs of non-sense and put the recipe at the very bottom. My goal is to try to keep things short and simple, but this is also a place where I do want to let you into my life more so we will see how it goes!
I wanted to share this recipe as it is one of my staples! Keto can be overwhelming and people tend to complicate it. This egg casserole is the PERFECT was to stay on track and keep it simple!

My casserole included eggs (obviously lol) mushrooms, spinach, cheese, pre-cooked bacon and ham. You just whisk everything together in a bowl, season it, grease dish ( I used avocado oil) and then pour mixture into the dish. I sprinkled some mozzarella cheese on top as well. I baked my casserole at 400 degrees for about 15 minutes. The dish lasted us the entire week and it’s the perfect grab and go breakfast!
1/2 bag of Spinach
1/2 Carton of Mushrooms
1/2 C Cheese of choice
1 pack of bacon
1 pack of ham
1) Cut the ham and bacon into bite size pieces, cook and set aside.
2) Pre-heat over to 400 degrees.
3) In a large bowl, combine all the other ingredients together and whisk. Add seasoning. Add in your cooked ham and bacon.
3) Grease a baking dish, pour mixture in the dish and bake for 15 minutes.
I cut mine into squares and store them in the fridge for the week! SOOOO delicious and great for a quick breakfast!
