Desserts are a must have on a Ketogenic diet. Especially, Keto Chocolate-Coconut cookies! I love experimenting and testing new recipes for the perfect cookie! This recipe is full of some favorite ingredients, including Chocolate, Coconut Flakes, MCT Oil and Low-carb Sugar sweetener.
I normally don't have a sweet tooth, but lately I have been a baking bee! Cookies, brownies, cakes, basically all of the desserts. I just find Keto Desserts to be so fun and yummy! Luckily, low-carb keto sweets come with zero regrets.
This recipe DOES include coconut oil, which means you will have run off after baking, Normally, I do not bake coconut oil, however if you pat these with some paper towel to adsorb the excess liquid, you should have no trouble. Make sure to line your baking sheet so when the coconut oil runs off, it will all be on the aluminum foil.
Another tip, I would advise to use a baking sheet with a lip, so the excess oil doesn't spill over. If you do not have a baking sheet with edges, place a second baking sheet on the rack below the one with the cookies that way it will catch the oil that may run off.

I love the addition of the nuts in this recipe as well. You can add any sort of nut you want, i chose Macadamia and Pecans but feel free to switch it up. I also dipped the bottoms of these with some chocolate syrup and put them in the fridge. I thought it would give it more of a chocolaty taste and boy was I right.
