As many of you may know, I meal prep EVERY SINGLE WEEK. I know, it sounds crazy but if I don't I am literally at a loss for what to eat all week. I find myself wondering what people eat for meals when they don't meal prep lol!
I am going to start going through all my recipes from the past and adding them to my blog, that way I can share with you guys what I do each week!
This was definitely one of my favorites, it did take a bit more time due to making the rice from scratch but it was worth it!
ALL of my meal prep recipes can be scaled down to normal meals if you'd like. These meals feed myself, and my boyfriend Monday-Friday.
NOTE: this recipe includes cauliflower rice. you can use frozen or my recipe here!
5 lbs tri-tip, cut in strips against the grain
1 cup organic chicken broth
3 tbsp liquid aminos
3 tbsp sesame oil
3 tbsp avocado oil
1 tbsp rice vinegar
2 tbs MCT oil
2 tbsp arrowroot flour
1 tbsp minced ginger
1 tsp red pepper flakes
1 tsp salt
1 tsp cayenne pepper
1 tsp smoked paprika
1 tsp chipotle powder
4 bags frozen cauliflower rice or 2 heads cauliflower to make your own (see post link above for my recipe)
2 red peppers
2 yellow peppers
1 bunch of bok choy
1 bunch of sliced radishes
1 red onion
1 jalapeño, sliced
Combine all the sauce ingredients for the beef, except steak and arrowroot, in a saucepan on medium heat until hot, once it is hot add in the arrowroot.
Heat a separate skillet on medium heat, add a scoop of ghee or more avocado oil. Add steak to the skillet and pour sauce mixture over the steak. Cook each side for around 5 minutes or to your liking.
Remove meat from heat once thoroughly cooked and set aside to rest.
Slice the meat to your liking.

Cut up vegetables and cook in the same skillet if you want to saute them.
Prepare your beef bowls with cauliflower rice, beef and the vegetables.
Side note- you can always add or remove vegetables to modify this recipe!
